Description

Ingredients

  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup strawberry jam
  • 1/2 cup powdered sugar (for icing)
  • 12 tablespoons milk (for icing)
  • Sprinkles (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Roll out the dough on a floured surface to about 1/4 inch thick and cut into rectangles (3 inches by 2 inches).
  7. Place half of the rectangles on the prepared baking sheet.
  8. Add a small dollop of strawberry jam in the center of each rectangle.
  9. Top each jam-filled rectangle with another rectangle of dough and crimp the edges with a fork.
  10. Bake in the preheated oven for 12-15 minutes, or until the edges are golden.
  11. Mix powdered sugar with milk to create icing, drizzle over cooled cookies, and add sprinkles if desired.

Notes

To achieve a lighter texture, ensure butter is at room temperature. Experiment with different fruit jams for unique flavors.
