- 6 oz. goat cheese

- 1/3 cup freshly chopped chives
- 3/4 cup freshly chopped parsley
- 1 sprig thyme, stem removed
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 1 1/4 cups pecan halves, toasted, divided
- Red bell peppers, for decoration
- Yellow bell peppers, for decoration
- Orange carrots, julienned, for decoration
- White carrots, julienned, for decoration
- Pretzels and crackers, for serving
Instructions
- In a bowl of a food processor, blend the softened cream cheese, butter, goat cheese, and garlic powder until smooth.
- Add the freshly chopped chives, parsley, and thyme; pulse until combined.
- Season with kosher salt and pepper, then adjust to taste.
- Form the mixture into a large ball for the turkey’s body.
- Roll the cheese ball in finely chopped pecans and chill for at least 1 hour.
- Decorate with pretzels and carrots for feathers and use bell peppers for the face and beak.
- Place the finished cheese ball on a platter and serve with crackers.
