Description

A flavorful Mediterranean chicken salad featuring grilled chicken, fresh vegetables, and creamy tzatziki sauce.


Ingredients

  • 1 lb grilled chicken, sliced
  • 1 tsp oregano
  • Salt and pepper to taste
  • 1 cup Greek yogurt
  • 1 cucumber, grated
  • 1 clove garlic, minced
  • 1/4 cup fresh dill, chopped
  • 2 tbsp lemon juice
  • 4 cups romaine lettuce, chopped
  • 1 cup tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup olives
  • 1/2 cup feta cheese, crumbled

Instructions

  1. Season the chicken with oregano, salt, and pepper, then grill until golden brown, about 5-6 minutes on each side. Let rest for 5 minutes, then slice.
  2. To make the tzatziki, mix grated cucumber, yogurt, garlic, dill, lemon juice, and salt; refrigerate for at least 15 minutes.
  3. Prepare the salad by washing romaine, slicing tomatoes, and red onion.
  4. Assemble the salad: start with romaine, add chicken, tomatoes, onion, olives, and drizzle with tzatziki. Top with feta and additional dill.

Notes

Leftover chicken can be used, and tzatziki can be made a day in advance for better flavor.
