A flavorful Mediterranean chicken salad featuring grilled chicken, fresh vegetables, and creamy tzatziki sauce.
Ingredients

- 1 lb grilled chicken, sliced
- 1 tsp oregano
- Salt and pepper to taste
- 1 cup Greek yogurt
- 1 cucumber, grated
- 1 clove garlic, minced
- 1/4 cup fresh dill, chopped
- 2 tbsp lemon juice
- 4 cups romaine lettuce, chopped
- 1 cup tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup olives
- 1/2 cup feta cheese, crumbled
Instructions
- Season the chicken with oregano, salt, and pepper, then grill until golden brown, about 5-6 minutes on each side. Let rest for 5 minutes, then slice.
- To make the tzatziki, mix grated cucumber, yogurt, garlic, dill, lemon juice, and salt; refrigerate for at least 15 minutes.
- Prepare the salad by washing romaine, slicing tomatoes, and red onion.
- Assemble the salad: start with romaine, add chicken, tomatoes, onion, olives, and drizzle with tzatziki. Top with feta and additional dill.
Notes
Leftover chicken can be used, and tzatziki can be made a day in advance for better flavor.
