Description

Ingredients

  • 2 cups grated zucchini
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon nutmeg (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the grated zucchini and sugar, mixing well.
  3. Add vegetable oil, eggs, and vanilla extract to the zucchini mixture and stir until blended.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
